SCFSS1100 Fundamentals in Food Science
This course introduces students to fundamental principles in food science required to produce safe and stable food products. Students will learn about food safety and food spoilage, and how spoilage can be controlled. Students will learn about the diversity and growth of microorganisms and learn how to cultivate and identify them in the laboratory. Knowledge will be extended to food manufacturing environments and the concepts of sanitation and hygiene will be introduced. Lastly, students will learn about sensory characteristics of food and how these can be assessed.
Commonwealth supported place (CSP)
A CSP is subsidised by the Australian Government and students pay a contribution amount. Each unit is classified into a band, depending on the study area of the unit (this discipline may be different from the study area of your course).

Grandfathered contribution amount - if you are a continuing student, who commenced your course before 1 January 2021, you will continue paying the same amount as you would have, had legislative reforms not been implemented, for any units that would otherwise have an increased student contribution amount.
